Do you know “锅底(guo1 di3)”? It literally means the bottom of the pot. However, the real meaning is the soup of the hot pot. As for the “锅底”, we usually have some different taste such as “微辣(wei1 la4), 中辣(zhong1 la4), and 重辣(zhong4 la4)”, which are different from each other according to their level of pungency. When it comes to “锅底”, “鸳鸯锅(yuan1 yang1 guo1)” is often mentioned. The literal meaning is “mandarin duck pot” but it does not mean the pot was made from mandarin duck. Actually, it is a pot with two side of “锅底” including the pungent soup and also the light soup.
